A Bit of Preacher Wife Genius
Luke is gone tonight to a Missions Conference. He told me this afternoon each church in the association had been asked to provide one dessert and that he was going to run to the grocery store and buy something to take. I applaud him for not wanting to worry me with it but, really. A store bought dessert when every other church would send some delectable, homemade goody?
Not on my watch.
So much for the whole 'Preacher's Wives shouldn't worry about living up to expectations' bit. I'm totally not letting my beloved church (or me, let's not forget me!) be represented by a stale cake out of the deli case. This is one of those things that would have had the ladies clucking, "Oh look at that poor young preacher with the store bought cake. I bet his wife doesn't cook."
Don't worry, baby. I got your back.
So I scrounged through the cabinets and refrigerator to discover I had the ingredients for Grape Salad. In my estimation, anything with cream cheese and pecans qualifies as a dessert. Anytime I make this or someone else brings it to church dinners, every bite is eaten and the bowl licked so it is definitely a safe standby in an emergency.
After I made the salad, I felt compelled to take a picture. My daughter said, "Mom, exactly why are you taking a picture of food?"
"Because doll baby, who knows the next time any will get cooked around here."
Memories, people. They are made in the kitchen.
So without further ado....
Grape Salad
Needed:
4 Lbs. of Red or Green Seedless Grapes
1 8 oz. package Cream Cheese
1 8 oz. container Sour Cream
1/2 cup granulated sugar
1 tsp Vanilla Extract
4 oz. Chopped Pecans
2 Tbsp. Brown Sugar
Directions:
Wash and dry grapes. In a large bowl, mix together the cream chese, sour cream, sugar and vanilla. Add grapes and mix until evenly incorporated. Sprinkle with the brown sugar and pecans, mix again and refrigerate until serving.
UPDATE:
Luke just called and said my dessert was DUSTED..(Southern talk for not a bite left..) So our reputation is safe.
